Meredith's family is very dear to me and the whole day was just so special - so worshipful and so full of God's presence. The entire day had such a strong focus on family and close friendships, and Meredith and Justin are such a precious, kind couple. They are so down to earth and I feel like I've known them for much longer than a couple of months. (Many thanks to Holly for connecting us!) We had such a lovely afternoon on Ivy's grandparents' farm trudging around in fields, sipping coffee on the porch, enjoying cookies made by Ivy's grandmother, and even collecting eggs from the chicken coop. I am so excited about their wedding in June, which will be on the farm! p.s. They are gourmet pizza connoisseurs! The pizzas the Moores love to make are not like a typical pizza - no mozzarella cheese or pepperoni, but instead things like grilled sweet potato chunks and feta cheese, or kale and sliced tomatoes. Rachel and Brett love cooking together and they were really fun to photograph! I am blessed to have this new friend in my life. This is part one of a series of photos of people who are dear to me, and recipes they love that mean something to them. These are recipes made with a lot of love and with an equal amount of wholesome, delicious ingredients! Holly made her friend Robin's cornbread recipe - a recipe that Holly and her husband fell in love over and is now one of her favorite recipes to make almost every week. Check it out! <img src="http://payload152.cargocollective.com/1/7/232808/5343903/webpost1_900.jpg" width="850" height="4760" width_o="731" height_o="4096" src_o="http://payload152.cargocollective.com/1/7/232808/5343903/webpost1_o.jpg" data-mid="28754796" border="0" align="left"/> 2 cups cornmeal mix (White Lily is my preferred brand, made in Tennessee!) 1 1/2 cups buttermilk 1/2 cup vegetable oil 2 eggs 3 tablespoons butter, melted Pre-heat oven to 425, and put an empty 12'' cast iron skillet in while the oven gets hot. Gently whisk all ingredients in a large mixing bowl. If the batter seems too thick, add a splash of buttermilk; if it seems too thin, add a dash of cornmeal. The batter should be moderately thick, slow to pour. Once the oven is pre-heated and the skillet is piping hot, pour the batter in. The sizzling you hear at this step is a good thing—it will ensure a crispy bread bottom. Return to oven and bake for 30 minutes, until the top is puffed and golden. Slice into wedges and serve with a generous smearing of butter and honey! P.S. I often half this recipe and use a smaller cast iron skillet better suited for my family of two. The proportions are forgiving so don't worry about finding the perfect sized pan (although, the perfect cast iron skillet is really something to be treasured).
